Dutch Oven-Apple Cinnamon Brown Betty
Ingredients:
Butter or spray oil for pan
1/2 lb (2sticks) unsalted butter, melted
2 cups rolled oats
2 cups all-purpose flour
2 cups brown sugar
2 tsp ground cinnamon
1/2 tsp baking powder
2 tbls cornstarch
5 tbls lemon juice (2 lge lemons, squeezed)
6 cups apples, peeled and sliced
Steps:
  1. Recommend using foil snakes on the bottom.
    Grease or foil line a 12" dutch oven. Mix oats, flour, brown sugar, cinnamon, and baking powder. Stir in melted butter, set aside. In separate bowl, mix cornstarch and lemon juice. Add apples and toss to coat with juice mixture. Sprinkle one third of the oatmeal mixture over bottom of dutch oven. Spread apple mixture evenly over oatmeal layer. Sprinkle remaining oatmeal mixture evenly over apples.
    Use 9 coals on the bottom, 16 on the top.
    Bake about 30 minutes, until topping is light golden brown. Serve warm. Serves 12.
    This can be baked in a 9"x13" pan at 350 for 35-40 minutes.

    Easy to do camping. Premeasure dry ingredients in ziploc bag. Prepare apples at campsite.
  2. Foil snakes: Loosely roll foil strips, place in the bottom of the dutch oven to create a barrier between the bottom and foil lining. When lining pan gently place on the foil rolls, do not flatten.
    Highly recommended when baking
